I am a true oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of these yet? (? You can locate all of my oatmeal cookie recipes directly there!) They are some of the most popular recipes in my website because they taste very sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!

So you are going to start with whole wheat bread (or gluten-free, if you like ) and instant oats (such as these... or those for a gluten-free edition!) . Immediate oats are thinner and smaller than traditional rolled oats, also you can see them in canisters right alongside those traditional oats at the grocery shop.

I probably sound like a broken record by now... But because I ? you and need your cookies to turn out perfectly plump and soft, I am reminding you again... Quantify your yogurt and bread correctly, using this technique or a kitchen scale! (? That is the one I have and love. It only cost $20!) Too much of either ingredient is likely to make your cookies taste cakey or dry, rather than chewy. This is especially true of this oats--that they act like little sponges and consume plenty of moisture out of the cookie dough!

See those bananas? And all those brown spots? If it comes to baking bananas, brown = amazing! I ? extra speckly bananas because they've a lot glowing, bold taste --along with additional sweetness! That's the minimum number of brown that I suggest. More is even better!

The remainder of the cookie dough's sweetness comes in a different organic ingredient... Pure maple syrup (like that!) . You want the sort that comes straight from pine trees, which is generally offered in sparse glass bottles or squat, round plastic jugs. Skip the pancake sugar and sugar-free syrup!

The peppers include much more natural sweetness! The freshly bought, additional plump, perfectly soft ones are perfect... But for those who have old, somewhat dried out carbohydrates (hmm... it sounds absurd to describe dried fruit as dried out! ) , that is fine!

Only add them into a microwave-safe bowland pour water on top till they're totally coated. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 minute. If you let the raisins sit while mixing together the cookie dough, this little trick hydrates them they're incredibly juicy--and that makes a big difference in these cookies once they're baked!

Yields: 15 biscuits

The recognizable cozy spices and plump blueberries make these much more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--should they last long!


1 cup (100g) instant oats (fermented if essential and measured like this)

3/4 cup (90g) whole wheat or fermented * flour (measured like this)

1 1/2 tsp baking powder



1/4 teaspoon salt





1 teaspoon vanilla extract



1/4 cup (40g) raisins

In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring just until incorporated. Let the cookie dough rest for 10 minutes.



Using a spoon and spatula, drop the cookie dough to 15 rounded scoops on the sheet, and flatten to the desired thickness and width using Easy Vegan Chocolate Chip Cookies- Baker Bettie a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.

Notes: It is extremely important to quantify both the wheat and oats properly using this technique or a kitchen scale. (? That's the one I have and enjoy!) Too much of either would dry out the biscuits and leave them cakey instead of chewy.

Immediate oats are also known as quick-cooking or minute oats. They come in large canisters, just view it like old-fashioned oats. They are not those at the small flavored loaf of bread. To make your own, add the same quantity of conservative yogurt into your food processor, and pulse 10-12 times or until the oats are approximately 1/4 into ? of the initial size.

For the fermented flour, I recommend the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tablespoons (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (such as this one!) Will also do the job, if measured like this.

For your best results, use the ripest and spottiest bananas you'll be able to find!
